These big, juicy burgers, made with my own special Homemade Steak Spice, are a showpiece at any barbecue. You’ll have lots of steak spice left over—it gives an incredible flavour to steak. Top the burgers with a nippy slice of old Cheddar, some smoky bacon and my tangy Tomato Chutney and you’ve got a burger that will have people talking! MAKES 4 SERVINGS

HOMEMADE STEAK SPICE

3 tbsp (45 mL) kosher salt

2 tbsp (30 mL) peppercorns

2 tsp (10 mL) granulated garlic

1 tsp (5 mL) granulated onion

1 tsp (5 mL) fennel seeds

1 tsp (5 mL) mustard seeds

1 tsp (5 mL) coriander seeds

1 tsp (5 mL) dill seeds

1 tsp (5 mL) hot pepper flakes
